Ingredients

  • 1/2 cup cooked jasmine rice (100 cal)
  • 1/2 cup 365 Organic Dark Red Kidney Beans, rinsed (111 cal)
  • 4 oz Pine Manor boneless skinless chicken breast, raw (120 cal, 26 g protein)
  • 2 oz North Country Smokehouse ham steak, diced (60 cal, 12 g protein)
  • 1/2 cup 365 Organic Three Pepper Blend, frozen (15 cal)
  • Homemade Cajun shake: 1 tsp smoked paprika, 1/2 tsp garlic powder, 1/2 tsp oregano, a pinch of chipotle (~5 cal). Whole Foods doesn’t carry a Cajun blend.
  • Hot sauce, to taste

Instructions

  1. Dice the chicken and ham.
  2. Cook them in a skillet with the frozen peppers and the Cajun shake until the chicken reaches 165°F.
  3. Add the kidney beans and a splash of water. Mash a few beans against the pan to thicken.
  4. Serve over rice with hot sauce.

Red beans and rice on a Monday is a feeling, not a schedule. This one is the Big Easy with no Cajun shelf-aisle.
